Happy Monday everyone! I hope you had a restful weekend. My Saturday and Sunday were great. Filled with cooking and baking Healthy Meals to Bring a New Mom for Margo, enjoying outdoor music at the Savannah Jazz Festival in Forsyth Park, and NFL football on Sunday.
Today I’m sharing a completely simple and completely delicious recipe I concocted over the weekend. This recipe (if you can call it that) was born completely out of necessity and not out of creative genius. Essentially Saturday morning found me craving peanut butter and jelly on toast and there I was, in a kitchen with no jelly. What’s a girl to do? Just as I was about to give up and crawl back in bed (clearly an appropriate reaction when one does not get what their belly is craving) I spotted the jar of Pumpkin Butter on the shelf. I had no idea how it would taste, but I decided to give it a whirl.
Result? My new favorite combination of fall flavors. Peanut Butter and Pumpkin Butter melted together and smeared over a perfectly toasted piece of Italian bread. Does it get any better than that? Eat this for breakfast alongside your scrambled eggs, or as a peanut butter and pumpkin sandwich at lunch. It really is amazing though slightly warm and toasted over the crunch of fresh bread. Add a little extra zest with a sprinkle of cinnamon on top.
